Dairy-Free Dessert: Raw Chocolate Avocado Mousse


This year, we celebrated my birthday with a health-conscious cocktail party. We served gluten and dairy free pizza, kale salad, green juice cocktails and my new favorite dessert - Chocolate Avocado Mousse - which was a huge hit!

This dessert is raw, gluten-free, diary-free and full of Omega-3s (healthy fats), Vitamin E (healthy skin) and Glutathione - an antioxidant that studies have proven is important in preventing aging, cancer and heart disease. And as I discovered through the process of preparing this fun new dessert, subbing Coconut Milk for regular milk added another health component as coconut milk is full of amazing health benefits, and also made it completely dairy-free, which is hard to find when it comes to desserts.  Lots of people nowadays (myself included) suffer from some level of dairy intolerance from feeling unsettled and lethargic all the way up to a full-blown diary allergy, so having dairy-free food and dessert options at parties is a really classy touch that your dairy-adverse friends will so appreciate!


Put simply, this is a nutritional powerhouse! You can enjoy a decadent dessert and feel like you're indulging while actually being super healthy.

Ingredients
- 1 ripe, fresh large Avocado
- 1/2 cup of cocoa powder
- 3/4 cup coconut milk
- 3 tablespoons agave
- 1 tablespoon pure vanilla extract
*Optional: assorted berries and mint sprigs

Directions
1) Place cocoa powder, agave, vanilla extract and just 1/2 cup of coconut milk into blender. I used the NutriBullet with the large blend cup, but any high-powered blender will do.
2) Scoop out as much avocado as you can into the blender, discarding seed and peels. Blend avocado into the existing mix.
3) Check the consistency! You are aiming for the same texture as pudding so if it needs more liquid, add the additional 1/4 cup of coconut milk, or more, if needed.
4) Taste test! The goal is to not taste the flavor of the avocado, so if you can still taste hints of avocado, feel free to add another splash of vanilla extract or agave.

Once you are happy with the taste and consistency, scoop into fancy glasses (I used these stemless martini glasses from Pier 1), sprinkle some fresh berries on top and maybe add a sprig of mint for a classy presentation.

Note: We made 2 full batches for the party which created about 10 servings of the size in the photos, approximately 3 oz.
