Adventures in Juicing: Parental Edition

I am so proud of my parents! After years of listening to me talk about juicing and all the great benefits I've seen in my life from it, they finally got on board! Three weeks ago, when I was visiting them at their house in Virginia Beach, I put the life-changing documentary "Fat, Sick and Nearly Dead" into their Netflix queue. Yesterday, I received a text from my dad exlaiming, "Guess what we had to eat today?" with this picture attached.....
Their faces made me laugh out loud!

For their first adventure in juicing, they used a Breville juicer
(as seen in "Fat, Sick and Nearly Dead") 
and made these 2 recipes: 

Drink #1: carrots, red apple, celery, pear.

Drink #2: cucumber, green apple, lemon.

Of course, my Mama, the creative chef that she is, came up with a way to re-use all the leftover pulp by turning it into a Veggie Soup! Brilliant idea! It always pains me to throw away that precious pulp, as it is rich in fiber and nutrients. Here is my Mama's Veggie Pulp Winter Soup recipe:

Soup base: Water, Knor Veggie Bouillon cubes, 1 can of fire-roasted tomatoes and green juice pulp (add in 1/4 cup amounts at a time, let it cook down, then add more gradually to your desired consistency)

Veggies: Zucchini, green beans, carrots, onions, garlic,
sweet potato
In honor of  my parent's new journey into the wonderful world of juicing, here is a collection of my favorite ways to re-purpose that precious veggie pulp:

Pizza Crust
Chocolate Muffins
high-fiber Dehydrated Crackers
healthy Mac & Cheese
and my all-time favorite: Banana Carrot Zucchini Bread
